Two new recipes from Pinterest that I have tried and they are yummy and work as described! Click on photos for source.

Two ingredient Lemon Bars. 1 box angel food cake mix 2 cans lemon pie filling.  Mix dry cake mix and cans of pie filling together in large bowl (I just mixed it by hand) Pour into greased baking pan. Bake at 350 degrees for 25 minutes or until top is starting to brown.

Taco Chicken: Dump 1 envelope of taco seasoning, 6 boneless, skinless chicken breasts & a jar of salsa in the crockpot, stir and cook on high (4-6 hrs.) or low( 6-8 hrs.) Should be able to shred with a fork. Place meat mixture in tortillas and top with your favorite toppings

This recipe I inherited from my Mom's Mom - my Mom made it tons as I grew up and now it's my go to recipe for those last minute kid parties, church socials, and any occasion requiring chocolate.  It doesn't require anything more exotic than cocoa an a cup of cold coffee.  One note - the batter is very liquid, not like traditional cake batter, but it yields very moist cake:

Chocolate Cake

2 eggs
1 cup veggie oil
1 cup milk
1 cup cold coffee
2 cups sugar
2/3 cup baking cocoa
2 cups flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 tsp vanilla

Mix well, pour into pan, and bake at 300 degree for one hour.  Sprinkle with sugar to decorate.  Less baking time is required for cupcakes...if a cake tester/knife comes out clean it is fully baked. Recipe halves and doubles well.

  1. Hey, I have made these lemon bars quite often and they do turn out good- I also like to take ready-made lemon icing and scoop about 1/3 into a small glass bowl or measure cup- stick it in the microwave for 20 seconds, take it out stir, again for 20 seconds... this is usually all it needs so it is a glaze like consistency and then just drizzle it over... no icing at all! I actually do many cakes like this.. I love the actual cake flavor and not big on a bunch of icing covering that up... confectioners sugar is great too but if the cake is still warm and you go overboard it starts to melt in just a bit and I think again, too sweet... Love this section though- recipes... another love of mine other than beading... Oh! & I have done lots in my slow cooker... never a chicken recipe as easy as this so trying it now! Thx!
